Are you just beginning a clean eating journey? This is where to start! Your breakfast - it’s the beginning of your day.  This recipe has always been a favorite for both my family and clients.  It’s a great way to save time on breakfast or help you swap out that not-clean snack you’ve been eating out of convenience.  Let’s not forget dessert - most desserts are packing on inflammation.  This banana bread can help you eat some dessert and not feel terrible.

A couple of things to help you – make two loaves (trust me!) because you or the family will devour it in no time.  Clean eating rookies always bake one but you will quickly realize two is where it’s at! This bread is best to bake and serve or let it cool then slice and pack into some non-toxic containers for later use.  Every morning just grab a slice for breakfast which helps you save time and stress of figuring out what to eat.  

This is not an ordinary loaf of banana bread.  For example. Let’s break down the ingredients here and talk about all of the swaps you can make.  I am throwing in two ways you can make this bread (vegan and not vegan) but the options are endless.  Think topping it with nuts and seeds which provide a ton of fiber, protein, vitamins and minerals.  You could also use any nut butter - cashew, almond, both, walnut, sunflower, macadamia or peanut.

Peanuts…did you know? Most peanuts are grown on the ground in moist conditions, making them susceptible to a type of mold (aspergillus flavus) that produces aflatoxin, a known carcinogen. Valencia peanuts, on the other hand, are grown in dry climates (such as New Mexico) above the ground, and do not contain this mold. This is my fav brand because of that exact reason. If you want a peanut butter at the grocery or amazon, this is the next best thing - be sure you get the “2 ingredients”. They make another product with 3 or 4 ingredients such as an added oil and sugar…no need. Be sure to read the label - sneaky!

Oh, back to the bread options…You could throw in 1/4 cup of some yogurt for a little boost - I did it in one loaf and not the other. You could not taste any difference! You could also leave out the chocolate chips or just add less. You could omit the honey, as well. It does just a little for the bread but not a key-piece. So, if you are short on honey or chocolate chips, it will still be amazing. A dash of cinnamon would be lovely in here. I would start with about a teaspoon if you are looking for that. But highly recommend just trying out the recipe as-is first. Okay, let’s get cooking…

CLEAN Chocolate Chip Banana Bread
Serves 8

Ingredients:

4 medium ripe bananas (mashed)
1 tbsp raw honey
1 tsp vanilla extract or vanilla bean powder
4 tbsp nut butter
2 pasture-raised eggs, (room temp)
