This chili is almost like a vegetable soup and what I mean by that is it has a ton of vegetables (yeah, we all need more of that) but it’s chili. You could serve this scooped over a baked potato or rice for a stew or just by itself. Personally, I love it with a scoop of clean yogurt, cilantro and some ripe avocado. The creaminess of the yogurt really serves the spice of the chili well.

Let’s read some labels in traditional chili recipes. Most call for beans. Why does this clean version not have beans? Beans have nutritional content, I will not deny that. However, most of us are bloated and are dealing with some type of inflammation. First, beans make us gassy because they contain a particular type of sugar, called oligosaccharide, that we cannot fully digest. Second, beans have phytic acid which are anti-nutrients. They bind to minerals so now you do not get the intended nutrition from your meal. We need minerals so why eat something that works against us? Beans, unfortunately, contain a lot of phytic acid. We can withstand some but people are eating beans around the clock. If you are not bloated or dealing with inflammation and beans make you feel fine, eat them :) but I want you to feel good so make the call.

The chili does call for a tiny bit of oil so I thought it would be fun to include some of the best on the market. My favorite extra-virgin olive oil was used in the chili recipe but you could swap it out for avocado oil, ghee or tallow. When searching for oils, look for cold-pressed and from a single source - meaning olives grown and pressed in one place. You don’t want oil from california and brazil in one bottle. That lowers its quality! You have to read the back of the label typically to find this out. I like to order this olive oil, in bulk, and store it in a dark cool place. Never keep the oil by your stove because heat will lower the polyphenols in the oil — that is the what fights inflammation.

When shopping for tomato paste and diced tomatoes, read the label and be sure there is nothing added like preservatives or sugar. Organic is the way to go if that is an option, too. Canned tomatoes and paste are a product where you will find clean ones without additives so spend a few extra minutes looking for the cleanest cans at the grocery! Your body will thank you.

CLEAN Chili
Serves 6-8
(*biscuit mix below in swap section)

Ingredients:
1 lb pasture-raised beef
1 tbsp extra-virgin olive oil
1 sweet or yellow onion, diced
3 cloves of garlic, minced
16 oz. bag frozen or fresh riced cauliflower
1 small red bell pepper, diced
1 small yellow bell pepper or 1 zucchini, diced
3 c diced tomatoes
3 oz tomato paste
2 cups grass-fed beef broth
3 tbsp ground cumin
3 tbsp dried oregano
2-3 tbsp chili powder (depending on spice level)
3 tsp clean sea salt
