🥗 Clean Italian Chopped Salad
SALAD
• 10 cups green-leaf lettuce or romaine
• 2 cups diced cooked chicken
• 4 oz. Applegate prosciutto, thinly sliced
• 1 cup roasted beets, diced
• ½ cup pitted green olives, halved
• 2 jars (6.5 oz) artichoke hearts, drained and diced
• 1 tomato, cut into wedges
• ½ cup Violife feta cheese, cubed (or go no cheese for the best route)
BASIL VINAIGRETTE
• 2 tsp freshly squeezed lemon juice
• 2 tsp chopped fresh basil
• ¾ tsp Primal Kitchen Dijon mustard
• 2 tsp red wine vinegar
• 1 garlic clove, minced
• ½ cup extra-virgin olive oil
• Fine sea salt and pepper, to taste
Instructions:
In a large bowl, toss together the lettuce, chicken, prosciutto, beets, olives, artichoke hearts, and tomatoes.
In a separate bowl, whisk together lemon juice, basil, mustard, vinegar, and garlic. Slowly add olive oil while whisking. Season with salt and pepper.
Drizzle ¼ cup of dressing over the salad and toss to combine. Serve with extra dressing on the side.
