You saw the dangers. Now here’s what to eat instead. This is one of my favorite indulgent-but-clean Southern-style dinners: BBQ Shrimp & Cauliflower Grits.

But it’s more than just a recipe.

I actually created this dish at the very start of Wake Up and Read the Labels—way back in 2019, pre-COVID lockdown. Back then, I was doing guest appearances on local TV stations like WGNO (watch the clip here), and this recipe became a fast favorite. Yes, masks were required during this time.

I even hosted a clean cooking class at the New Orleans School of Cooking where we made this shrimp + grits dish alongside chocolate chip cookies. I’ll share a photo from that event—it was such a joy to connect with viewers in person and cook together. Honestly, I’ve been thinking of doing it again. Should we?

And I’ll be sharing some behind-the-scenes this week while I prep the dish again. Everything goes into one pot to simmer, then it’s poured over shrimp and baked. So simple, so flavorful.

It’s especially good served over creamy cauliflower grits, but feel free to try it with pasta or even organic regenerative white rice.

  • 3/4 cup butter (Miyoko’s or grass-fed)
