Peach (or Mango) Avocado Salad
Ingredients:
1 peach or 1 mango, chopped
1/4 green bell pepper, diced
1 cup yellow tomatoes, chopped
1–2 avocados, chopped
1 tbsp fresh herbs (mint, cilantro, or parsley), chopped
Juice of 1 whole lemon
Extra virgin olive oil, to taste
Sea salt, to taste
Instructions:
Add the chopped peach (or mango), yellow tomatoes, and green bell pepper to a bowl.
Gently fold in the avocado.
Sprinkle in fresh herbs.
Squeeze the juice of one whole lemon over everything.
Drizzle with olive oil and add a pinch of sea salt.
Toss lightly and serve immediately.
