Avocado Peach Salad.

Peach (or Mango) Avocado Salad

Ingredients:

  • 1 peach or 1 mango, chopped

  • 1/4 green bell pepper, diced

  • 1 cup yellow tomatoes, chopped

  • 1–2 avocados, chopped

  • 1 tbsp fresh herbs (mint, cilantro, or parsley), chopped

  • Juice of 1 whole lemon

  • Extra virgin olive oil, to taste

  • Sea salt, to taste

Instructions:

  1. Add the chopped peach (or mango), yellow tomatoes, and green bell pepper to a bowl.

  2. Gently fold in the avocado.

  3. Sprinkle in fresh herbs.

  4. Squeeze the juice of one whole lemon over everything.

  5. Drizzle with olive oil and add a pinch of sea salt.

  6. Toss lightly and serve immediately.
